Not included in the Fall box. The latest iteration using our hand-formed, Gulf Islands clay amphorae. This time we fermented traditional French bittersweet apples from our cidery orchard with a mix of island heirlooms—and then allowed the cider to age on the lees for a few months. It was then bottle-conditioned for a light, natural bubble. The oxidative nature of the clay gives it a mature character with a light acetic lift. Funk-forward and orange-wine-esque in a great way. 7% ABV
